My peppers have started popping and I actually was able to make a pretty good harvest today. I want to can my gypsy peppers and jalapeno peppers, but I don't have enough yet.

Can I freeze the peppers and then thaw and can when I'm ready? Or will freezing change the peppers?

a) I hate you for having peppers already - our garden is still barren

b) I have *heard* that peppers are super easy to freeze - no blanching needed. Just pop them in the freezer.

When I've frozen chopped & sliced bell peppers, they are all mushy when thawed...so I don't know. Maybe stick most of them in the fridge, and a couple in the freezer to test?

Depends what you're going to use them for.....anything you freeze with lots of water content veggie wise will change when you thaw it.

You could dry also....again depending what you're going to use them for.

And I'm with Trista *hate*! I am currently up late at night making sure by baby chicks don't freeze as it's 21 here tonight....4-6" of snow expected and winter storm warning! We lost power last night and they all almost froze. Soooo the thought of preserving peppers already......not on my mind!

LOL It's been HOT here - but it's always hot here! Even the winters are real winters here.

I think I may go the drying route and freeze what I'll cook with. It seems to me they'd turn to mush unfrozen. Thanks guys!

We freeze peppers but they do get mushy so you won't want them for eating raw or stir fries. I use them in casseroles, one pot dishes, stuff like that.
