Sweet Potato Recipes

I am looking for some good recipes that use sweet potatoes. Not necessarily for Thanksgiving, but if they are then that's okay. I just have an abundance of these yummies and need to cook them!

Put a little olive oil in a pan. Slice them or cube them, salt them, and bake.

I have a bread maker recipe for set potato bread that is pretty yummy. It's one of those recipes where you would never guess it had sweet potatoes in it. I will post it if you are interested.

I also cube and steam them, then mash them with a small bit of butter and brown sugar/cinnamon/nutmeg.

I don't boil them like I do regular potatoes. They don't do so well.

Oh, and don't freeze them while raw. If you do, when you go to cook them, you will never get the inside done. I don't remember the explanation, but something to do with an enzyme or something.

I love them just baked, with a bit of melted butter and salt - ohmyword SO yummy Smile

I can't stand them with marshmallows/cinnamon/casserole served at Thanksgiving - just give them to me like they're intended to be eaten!

roasted
cubed in soups
if you grate them you can mix them into a quick bread
sweet potato fries (baked, but I am sure fried is yummier)
pureed soup
