3-5lbs Sliced yellow squash
1 medium chopped Sweet Onion
1- 16 oz sourcream
1 can cream of celery
1/2 lb shredded pepper jack cheese
1/2 lb montery jack cheese
2 boxs of stuffing
3-6 tbs of butter or margarine
Salt & Pepper to taste
2 Tbs of Margarine/ butter, Onions and Yellow squash in a large pot on Medium heat. Cook until soft , stirring occasionally. Drain .
Combine Mix and Sour Cream, soup, grated cheese in a large bowl.
Next Melt remaining butter/ margarine. Add stuffing mix well . spread 1/2 in the bottom of large deep cassarole dish. Add Squash mixture. Add remaining mixture to the top of dish . Bake 30-45 min.
this can be made ahead of time and kept in the fridge . max 3 days !!
to increase heat add more pepper jack !!!
