There is a sweet mom of 4 that i know, and sadly after being in remission for afew months, her cancer has returned. She is fighting hodgekins lymphoma for the second time, and she is only 29 years old. She has 4 kids at home, and a super sweet hubby.
I am going to bring them dinner tomorrow night, and i know she is eating organic, gluten free, and dairy free, trying to rid her body of the cancer. Her husband said not to worry about it, and just bring whatever,a nd she will eat something else. BUT i would love to prepare a meal for her family that she can eat as well
Anyone have any recipes? As far as i know, they do eat meat, but no onions, chillis or green peppers. I have quinoa on hand, because i eat it often, but i dont know if her kids will eat it the same way I do. My kids do not like it. LOL

So if you have any ideas, please send them my way.
TIA

Also, looking for healthy desserts that her kids might enjoy!

Healthy desserts? As long as rice is GF, which I'm pretty sure it is...

One of my favorite recipes. SO yummy and simple.

trader joes sells really affordable, really excellent organic brown rice penne that is gluten free and only 1.99 per pound. we like it with hummusy type dressing and I bet it would be great with other sauces too. udi's makes pretty good dairy free gluten free muffins that they sell at sprouts and whole foods in the frozen section, and udi's also has yummy whole grain gluten free bread and bagels (people rarely buy those kinds of convenience items so sometimes it is kind of nice to treat them to a 5.99 loaf of bread). feel free to call me for other ideas.

Rice crispy treats made with a butter alternative are dairy and gluten free if you buy the name brand rice cereal or a health food store option.

As for main dishes, a chicken and vegetable soup would be gluten and dairy free. most of the gluten/dairy free things I make involve ingredients that most don't keep on hand. Do you have tamari?
Becky might have a good recipe idea.
