We're leaving for vacation this week and I need an idea for a lunch I can prepare ahead of time and eat on the road somewhere. We're leaving at 3 AM and I don't think I'll be up to cooking at 2AM, so something that can be prepared and packed ahead of time would be great.

what about hoagies and a tub of chopped raw veggies and fruit? or a pasta salad. fresh and / or dried fruit for dessert.

Chicken salad on Triscuits, Asian noodle salad with chicken, cold fried chicken, sliced baguette with Laughing Cow cheese, salami with cream cheese rolled inside, chicken wraps (keep stuff separate until ready to assemble so it doesn't get soggy). Those are the favorites in our family.

Make meatloaf the afternoon before,... slice 1/2 thick when cool and put into a plastic storage container. Pack in the bottom of ice filled cooler. Throw in a bottle of mustard and loaf of bread a jug of ice tea and a selection of ruit and you have the fixing for meatloaf sammiches and snacks.

Well, we've done so much driving with kids that sandwiches started to bring out a lot of whining, so I was forced to get creative. It's not a lot of work, I just had to learn to plan a little bit (which is my downfall LOL). When we were driving all over France visiting family years ago, we lived off of bread with cheese, pate or nutella for days on end. :D

Dang, those all sound so good! Now to keep myself from making so much we can't eat it all Smile

I've been baking for breakfast: scones, chocolate chip bread and blueberry muffins. In my defense, I'd like these to feed us for at least 3 breakfasts in the hotel room.

you could also try, chicken ceasar wraps... prep the night before

Grab the flat tortillas from deli section.
Grab a rotisserie chicken
grab a romaine lettuce
grab some grated parmesan (optional)
1 bottle ceasar salad dressing

Pull all chicken off the bones and chop into small chunks, place in ziploc bag.
Wash, dry and chop up lettuce place in another ziploc bag.

When you need to use,... take tortilla, throw handful of lettuce on tortilla, place some chopped chicken, drizzle with dressing, sprinkle with parmesan. Fold in sides and roll up... YUM!!

See.. then there's me.... i'm the one that's very happy to stop at a fast food place so we can all get out and stretch and use the bathroom! We have snacks in the car, but not full on meals.

on these once you roll them wrap them in a damp paper towel/wet then wrung out, and then plastic wrap so they stay soft and fresh

We're going to picnic at a rest stop for lunch and eat out for dinner somewhere. It's a long drive--14+ hours, so I'm trying to save a little $$ by having a packed lunch. I fully intend to stretch legs because my boys will be bouncing off the walls if we don't june
